Recipes for Pan Fish including Crappie, blue gill, perch and other white flesh fish. These sweet mild fillets make a great meal and are easily caught almost anywhere.
Crappie Parmesan

1/4 cup butter or margarine, melted
1/2 cup dry bread crumbs
1/3 cup grated Parmesan cheese
1 tsp salt
1/2 tsp paprika
1/4 tsp dried oregano
1/4 dried basil
1/4 tsp black pepper
2 Tbs minced fresh parsley

1 pound Crappie filets

Place butter in shallow dish.
Flavored in another dish.
Dip fillets into butter  then dredge in breadcrumb mixture. Shake off excess and place in pammed baking dish. 15X10X1 works well. Bake uncovered at 350 degrees for 20 minutes or until fish flakes easily with fork.

Quick Alternative method  use 
1/2 to 1 cup Progresso Italian Bread Crumbs and add
1/3 to 2/3 cup grated Parmesan Cheese
1 tsp salt

Proceed with dipping and dredging as above.

Any white fish may be used in this recipe...Perch, bass, walleye and bluegill are all delicious.
